Point Reyes Farmstead Cheese is one of America's most admired blue cheese makers. Bay Blue is a buttery, earthy blue with a light sweetness and a dry, fudgy, crumbly texture. Aged for three months, its flavor is more mellow and balanced than other blues - even winning over some of the blue-dubious among us.

Bay Blue is made from pasteurized cow's milk, and aged for three months, which allows it to develop mushroomy notes and a beautiful natural rind.
